Cofu
COFU is a fully plant-based Japanese restaurant in Vancouver's Chinatown, founded by Akiko Gulkison, a Japanese immigrant and single mother who built Canada's first fully plant-based omakase experience. The intimate 18-course tasting menu is served at an 8-seat counter handcrafted by Japanese carpenters, blending traditional technique with seasonal vegetables sourced locally and from Japan. On weekends, the same address also houses Hush, a quiet coffee space serving Japanese-roasted beans and ceremonial-grade matcha from Kyoto.
