Ramen Taka notsume is the first overseas location of a ramen chain rooted in Asahikawa-style ramen from Hokkaido, Japan, founded by Hideki Sasaki whose mother ran the original restaurant. Their signature golden tonkotsu broth is simmered for hours from pork bones, vegetables, and dried fish, served with egg-free noodles and leaner chashu. A standout draw is the Giga Dragon Ramen Challenge, where challengers attempt to finish five regular-size bowls within 30 minutes.
