Pizza Rubato
Pizza Rubato Napoletana is an independent artisan pizzeria drawing inspiration from the musical concept of 'tempo rubato' — applying rhythmic freedom to Neapolitan pizza tradition. The restaurant uses 48-hour fermented '00' flour dough, imports most ingredients directly from Italy, and bakes in an AVPN-approved Valoriani oven that replicates a wood-fired experience. Cyclists stopping here can expect a full sit-down meal or takeout with an extensive menu of specialty Neapolitan pizzas, from classic Margherita to inventive pistachio-pesto and chili-honey creations.
