Jones Bar-B-Que is an independent Texas-style barbecue restaurant that built its own stick-burner smoker and uses 100% southern smoking techniques, substituting local Vancouver Island woods like oak and maple for traditional Texas post oak and pecan. Founded in 2016 by Chris Jones, the restaurant cooks fresh daily and serves sliced meats until sold out — a deliberate commitment to never serving leftovers. The Langford location on Goldstream Avenue is their newer outpost, complementing the original Cook Street spot in Victoria.
