Île Sauvage — French for 'Wild Island' — is a Victoria craft brewery specialising exclusively in Belgian-style wild ales and sour beers, using Kveik, Lactobacillus, and Brettanomyces fermentations alongside oak-ageing vessels and local fruit refermentations. The name pays dual homage to the wilderness of Vancouver Island and the wild-fermentation philosophy at the heart of every batch.
