Hydra Estiatorio Mediterranean
Hydra Estiatorio is a high-end Greek seafood restaurant occupying the soaring 60-foot atrium of Vancouver's EXchange Tower, named after the Aegean island renowned for its culinary traditions. The restaurant operates a Raw Bar with daily fresh seafood flown in from Greece, New Zealand, and Hawaii alongside locally sourced BC salmon and oysters, with fish deboned and plated tableside. The venue is located within Vancouver's first LEED Platinum heritage conversion hotel and uses geo-exchange thermal regulators, solar thermal panels, and storm water retention systems as part of its sustainability program.
