The concept originated in Switzerland and has appeared in London, Paris, New York, and Montreal before coming to Vancouver, designed to heighten taste, smell, and touch by eliminating sight entirely. The restaurant is also a social-enterprise of sorts, deliberately employing blind and visually impaired staff in a role where their skills are unmatched.
