Fol Épi Bakery

Fol Épi is an organic bakery and cafe established in 2009 in Victoria, BC, whose name means 'crazy wheat head' — an homage to French baking tradition and wild yeast cultures. Operating out of Dockside Green, they stone-grind their own flour on-site and produce artisan breads, all-butter viennoiserie, seasonal pastries, and daily sandwiches using local, small-scale producers. It is a well-established community fixture that also supplies other local businesses.
